This is the first blog post about food on a blog nobody asked for, but you’re gonna have to deal with it. Today pup made her world famous (I’m her world :3) Breakfast Burgers which are basically a sausage smash burger in a french toast bun, with American cheese, a fried egg, and smothered in maple syrup. Super healthy…

This is a little more effort than our usual breakfast, but if we are craving something sweet after a night of getting crossed or fucked, this hits the spot.

This recipe was inspired by a late night thought of “fuck those burger buns are gunna go bad soon.” It’s pretty much just a sausage egg + cheese with extra steps. There’s a lot of wiggle room if you’d prefer bacon instead of sausage, wanna add veggies / other stuff, literally whatever. You can do whatever you want with it im a dog not a cop lol.

Whenever I make sausage patties I always make a bunch so we can have breakfast sandwiches for a few days. It’s also worth mentioning that a flat top / griddle would’ve been better for making the sausage patties cuz they were kinda crowded in the cast iron, but they kinda make a mess of your kitchen + the cast iron helps manage that. Our kitchen still kinda stinks though, I gotta deep clean it soon xD

Step 1: Sausage Patties

The recipe is pretty simple, start with the Jimmy Dean’s sausage and separate into even balls, about 1/4lbs each. In the meantime, heat up a skillet or cast iron pan around medium high heat with a little bit of oil.

Once up to temp, place the balls in the pan and smash using whatever utensil you have on hand with a square of wax paper between. Try not to overcrowd the pan. We can only fit 2 balls in our mouths pan at once. The wax paper will help with making sure the balls do not stick to your utensil. Season with salt, pepper and any other spices you want, to taste. We tend to use gochujang powder on the patty which adds a good flavor and some heat.

Once the patty starts to get some good color, flip and continue to cook the patty until both sides have a good crust. Place them on a paper towel or something until ready to assemble.


Step 2: French Toast Buns

First step for the buns is to cut the top and bottom off, to expose the breading on each side. We tend to use stale potato buns, but whatever you have on hand works. This will allow the egg to penetrate and soak in.

The mix we use is 3 eggs, some milk, salt, pepper, and cinnamon powder, stirred in a bowl before putting into a pie dish to soak our bread in.

After soaking the bread in the mixture for a minute or two, place in a pan at medium-low heat. Brown on both sides and set aside. For more flavor we could have wiped out the cast iron and left a small amount of the sausage grease and cooked the french toast in the cast iron.


Step 3: The optional fried egg

Its a fried egg. Don’t burn it. Fucker.

Step 4: Sauce

The next portion is to prep the sauce. Our sauce is mostly Kewpie mayo, a good amount of smoked paprika and some hot sauce to taste. Our favorite hot sauce is Mama Burn from Black Bear Diner, a chipotle hot sauce. We’ve made it a habit to pick some up on our way home from the airport every time we travel through Aurora.

Step 5: Assembly

Its a burger. Bottom bun down and sauce it. Put the sausage, egg and a slice of American cheese on top. At this point we chose to use a torch to melt the cheese a bit more. Crown it with the top bun, smother in maple syrup and enjoy.

Ingredients

Patties

  • 1/2 lbs Jimmy Deans Hot Sausage

Buns

  • 2 stale af burger buns
  • 3 eggs
  • milk
  • cinnamon sugar
  • vanilla extract

Sauce

  • kewpie
  • paprika
  • hot sauce

Assembly

  • 2 slices American Cheese

Instructions

Sausage Patties

  • Preheat a cast iron pan over medium-high heat
  • In the meantime, separate sausage into 1/4lbs balls
  • Oil the cast iron pan, and place two balls down, leaving enough space to smash
  • Place wax paper square on top and smash with a utensil
  • Season to taste and cook on one side until golden with a crust
  • Flip burger patty and cook until done

Buns

  • Cut the top/bottom off of the bun to expose the soft inside on both sides
  • Mix three eggs, milk, cinnamon, salt and pepper to taste, with a very small amount of vanilla extract
  • Dip the buns in your mixture to coat
  • Cook as you would french toast in a pan, until both sides are golden brown for all buns

Sauce

  • Mix your mayo, paprika and hotsauce until smooth

Assembly

  • Bottom bun, sauce, sausage, cheese, top bun. Smother with maple syrup and enjoy
